CHACHA
This wine in the store
ChaCha is an amber wine born from a rather unique blend of plots, composed of 70% Chasselas and 30% Chardonnay, macerated with its skins to reveal deep textures and unexpected aromas. Chasselas, a white variety almost exclusive to the Itata Valley—where 99% of Chile's plantings are concentrated—finds its most authentic expression in the Cerro Negro area, in the Quillón commune, very close to the Itata River that gives the valley its name. There, more than a century ago, Swiss settlers introduced this grape and cultivated it in a unique way that is maintained to this day: with a traditional pruning technique called "levante," possible only in ungrafted vines, which are immune to phylloxera. Early-ripening and delicate, this grape is usually destined for fresh consumption or for making raisins. We wanted to highlight its value, paying homage to its origins and these little-known characteristics. The Chardonnay, on the other hand, comes from a younger plot: when we began working it in 2017, the vines were only 15 years old. Trained using a modern trellis system and cordon pruning, this vineyard grows on the banks of the Changaral River—a little-known, short waterway that originates south of the town of San Carlos and flows into the Ñuble River, very close to the plot. Its sedimentary deposits provide excellent root anchorage, contributing great tension, minerality, and freshness to the grapes. Since 2017, we have carefully tended both plots to combine them in this unique blend, giving life to an original wine full of character. Both vineyards are entirely dry-farmed—without irrigation or rootstocks—and are managed according to agroecological principles, respecting the natural rhythm of the land and the vines. ChaCha is, in essence, a tribute to the historic terroir of Itata, where ancestral tradition and modern freshness meet in every bottle.
